Portions for 1 serving:
1/2 goat cheese (4oz)
1 small aubergine
1 onion
1 red pepper
1 yellow pepper
1 garlic clove
2 tbsp olive oil
Prepare the peppers in advance so that it does not take too much time to prepare the meal. It takes about about 1 hour in the oven at 150°C or in a ceramic pan with a lid on low heat. After les have cooled down, peel and remove the seeds of both peppers.
Heat a ceramic pan with olive oil and add the onion thinly sliced along its length. Add the aubergine cut in three sections and cut again in 1/2" slices and cook for 30mn. Then add the pepper cut in strippes and press the clove of garlic over the vegetables and cook 15mn more. Place the goat cheese in the middle of the pan and cook a few minutes. Be careful as it melts quickly.
Serve with toasted bread.
